  • 1 tbsp canola oil
  • 1 white onions (medium, or 1 medium yellow onion, chopped)
  • 3 garlic cloves (minced)
  • 1 tbsp ground cumin
  • 1 12 tbsps chili powder
  • 1 tbsp chipotle (dried, powder)
  • 2 corn tortillas (torn)
  • 2 tbsps unsweetened cocoa powder
  • 12 cup ground almonds (I use a coffee bean grider)
  • 8 ozs tomato sauce (no-salt-added)
  • 4 cups chicken broth
  • 2 tbsps brown sugar
  • 12 tsp salt
  • 1 tbsp white wine vinegar (reg. white vinegar works fine too.)
  • 4 chicken breasts
  • 8 flour tortillas (large)
  • 16 ozs refried beans
  • 1 cup cheddar cheese
