  • 1 lb chayotes
  • 6 ozs tomatoes (roasted, canned fire roasted, or roast whole, stovetop or under broiler until skin begins to blacken do not remove skin but process whole)
  • 1 clove garlic cloves (chopped)
  • 2 tbsps olive oil
  • 2 tbsps onions (chopped)
  • 1 anaheim chile (green, stem and seeds removed and discarded chopped)
  • 1 pinch pepper flakes (red chile)
  • 14 cup water
  • salt (taste)
  • 14 cup chopped cilantro (roughly)
  • 14 cup monterey jack cheese (finely grated)
