Ingredients

  • 3 lbs pork ribs (thick, meaty country style, pork butt or pork shoulder)
  • 2 lbs lard (or enough to cover the meat)
  • 1/4 cup water
  • 1 orange zest (removed with a vegetable peeler in wide strips)
  • 1 lime zest (removed with a vegetable peeler in wide strips)
  • 3 cloves garlic (unpeeled)
  • 1/2 tsp coarse salt
  • 12 corn tortillas (soft)
  • 2 tbsps vegetable oil
  • guacamole (accompaniment, recipe follows)
  • pico de gallo (Emeril's, accompaniment, recipe follows)
  • 2 avocado (large, firm--ripe, peeled, pitted and cut into 1/2-inch pieces)
  • 1/4 cup white onion (minced)
  • 2 tbsps cilantro leaves (minced fresh)
  • 1 tbsp fresh lime juice (or more to taste)
  • 1 tsp serrano chile (minced)
  • 1/4 tsp ground cumin
  • 1/4 tsp minced garlic
  • 1/4 tsp salt
  • 1 pinch cayenne
  • 11/2 lbs plum tomatoes (cored, seeded and diced)
  • 3/4 cup white onion (finely chopped)
  • 1/2 cup cilantro leaves (chopped fresh)
  • 1 tbsp fresh lime juice
  • 2 tbsps jalapeno chilies (minced, seeded, or serrano chiles, about 2 medium)
  • 1 tsp clove (minced garlic)
  • 1/2 tsp salt
  • 1 pinch cayenne
