  • 1 12 lbs butternut squash (halved lengthwise and seeded)
  • 34 lb yukon gold potatoes
  • 1 large egg (lightly beaten)
  • 12 cup pecorino romano (finely grated, 1 12 oz)
  • 12 tsp chopped fresh thyme (finely)
  • 12 tsp sage (finely chopped fresh)
  • 12 tsp salt
  • 18 tsp white pepper
  • 1 pinch nutmeg
  • 34 cup all-purpose flour (additional for dusting)
  • 30 ozs confit duck legs
  • 5 tbsps unsalted butter
  • 3 lbs swiss chard (stems and tough center ribs discarded and leaves cut into 2 by 1 inch pieces then washed but not dried)
  • 12 tsp salt
