Ingredients

  • 3 tbsps olive oil
  • 51/2 lbs beef brisket (top flap removed and fat trimmed)
  • ground black pepper
  • coarse salt
  • 3 onion (large, about 2 1/2 pounds, thinly sliced)
  • 2 cloves garlic
  • 2 cups dry red wine
  • 11/2 cups red wine vinegar
  • 8 carrots (medium, cut into 1-inch pieces)
  • 6 celery (ribs, peeled, and cut into 1-inch pieces)
  • 28 ozs plum tomatoes (and their juices, pureed)
  • 6 turnips (small, peeled and cut into 1/2-inch wedges)
  • 4 rutabaga (medium, peeled and cut into 1-inch wedges)
  • 1/4 cup chopped parsley (for garnish)
