Ingredients

  • 1 lb goat (ground)
  • 1 large egg whites
  • 3 tbsps bread crumb fresh
  • 2 shallots (medium, minced)
  • 1 tsp dried oregano
  • 1 tsp dill (dried)
  • 1 tsp salt (halved and used in two places in the recipe)
  • 1 tsp ground black pepper (freshly, halved, same as with the salt)
  • 1/2 cup whole wheat flour
  • 2 tbsps olive oil
  • 1 yellow onion (large, chopped)
  • 1 fennel bulb (large, any stems and fronds removed, the tough root end sliced off and discarded, then the bulb itself chopped)
  • 1 tomatoes (large, chopped)
  • 1 lb artichokes (fresh baby, trimmed; or one 12-ounce, one 340-g package whole or quartered frozen baby artichokes, no need to thaw)
  • 11/3 cups reduced sodium vegetable broth
  • 11/2 tbsps reduced sodium tomato paste
  • 2 tsps lemon juice
  • 1 tsp ground cinnamon
