  • 2 cups black beans (or refried pinto, you can use good quality prepared beans, or make your own as indicated below)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup pimentos (stuffed Spanish olives, halved if large)
  • 2 tomatoes (small ripe, cored and sliced into half-moons)
  • 1 Haas avocados (ripe, peeled, halved and sliced thin)
