  • 1/2 lime
  • 13/4 cups black beans (or refried pinto, you can use good quality prepared beans, or make your own as indicated below)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup pimentos (stuffed Spanish olives, halved if large)
  • 11/2 tomatoes (small ripe, cored and sliced into half-moons)
  • 1 avocado (ripe Haas, peeled, halved and sliced thin)
  • green chile
  • corn tortilla chips
  • salsa
  • sour cream
  • 1/4 cup leaf lard (rendered, pork/bacon drippings, or vegetable oil)
  • 2 cups black beans (or cooked pinto, with their liquid)
  • 1 tsp ground cumin
  • 1 tsp oregano (dried Mexican, or marjoram)
  • 1 cup mexican chorizo (crumbled cooked, well-drained, optional)
