Ingredients

  • 1/2 oz dried porcini mushrooms (about 1/2 cup)
  • 1/2 cup boiling water
  • 1 tenderloin roast (2- to 3-pound center-cut beef, trimmed)

  • 3 tbsps unsalted butter
  • 2 shallots (medium, finely chopped)
  • 2 garlic cloves (medium, finely chopped)
  • 8 ozs cremini mushrooms (trimmed and finely chopped)
  • 2 tsps fresh thyme leaves (finely chopped)
  • 6 ozs chicken (or duck liver pâté, such as our Chicken Liver–Port Pâté, at room temperature)
  • 6 ozs prosciutto (thinly sliced)
  • 1 puff pastry (14- to 16-ounce package all-butter, thawed in the refrigerator if frozen)
