  • 4 tsps olive oil
  • 2 onions (thinly sliced)
  • 12 cup dry white wine
  • 12 tsp dried thyme
  • 10 ozs skirt steak (cut crosswise on diagonal into 14 inch wide strips)
  • 1 tsp kosher salt (coarse, divided)
  • 6 ozs blue cheese (coarsely crumbled stilton, 1 13 to 1 12 cups divided)
