Ingredients

  • 2 lbs chuck (boneless, cut into 1 1/2-inch pieces)
  • 750 ml dry red wine (preferably Burgundy or Côtes du Rhône)
  • 2 onion (medium, halved lengthwise, then thinly sliced lengthwise, 2 cups)
  • 1 tsp chopped fresh thyme (finely)
  • 1 Turkish bay leaves (or 1/2 California)
  • 1/4 cup fresh parsley leaves
  • 4 sprigs flat leaf parsley
  • 1 carrots (thinly sliced)
  • 11/2 tsps salt
  • 1 tsp black pepper
  • 2 tbsps vegetable oil
  • 2 shallots (large, finely chopped)
  • 2 large garlic cloves (finely chopped)
  • 2 tbsps all-purpose flour
  • 6 ozs thick-cut bacon (preferably from slab bacon, rind removed if necessary; not smoked)
