  • 2 onions (halved lengthwise then thinly sliced lengthwise 2 cups)

  • 1 turkish bay leaf (12 california)
  • 4 sprigs leaf parsley (fresh, 14 cup chopped fresh, leaves)
  • 1 carrot (thinly sliced)
  • 1 12 tsps salt
  • 1 tsp black pepper
  • 2 tbsps vegetable oil
  • 2 shallots (finely chopped)
  • 2 large garlic cloves (finely chopped)
  • 2 tbsps all-purpose flour
  • 6 ozs bacon (preferably from slab, rind removed if necessary; not smoked)
