  • 1 cup chopped celery (finely)
  • 1 bay leaf
  • 18 tsp cayenne pepper
  • 2 tbsps dry white wine
  • 2 tbsps pecorino romano cheese (grated)
  • 20 oysters (shucked or four 8 ounce jars shucked)
  • 1 cup breadcrumbs (fresh, made from crustless french)
