  • 3 tbsps curry powder
  • 1 12 tsps ground cumin
  • 1 tsp salt
  • 1 lb boneless skinless chicken thighs
  • 1 12 cups split peas (yellow)
  • 1 carrot (chopped)
  • 1 apple (chopped, we usually use red delicious, no need to peel it, just core it and chop it)
  • 34 cup onion (chopped)
  • 2 garlic cloves (minced)
  • 1 jalapeno pepper (seeded and finely chopped)
  • 1 chicken bouillon cubes (instant)
  • 1 12 cups water
  • 14 ozs unsweetened coconut milk (we usually use the lite one)
  • 2 tbsps raisins (optional)
  • 2 tbsps slivered almonds (optional)
