5 Ingredient Friday: Shrimp, Snow Pea, & Zucchini Stir Fry!

In the quest for healthier, easy meals, I’ve decided to start doing something called “5-Ingredient Fridays,” where every Friday (or whatever day of the week I feel like it), I cook dinner with 5 ingredients or less. Sure, only using 5-ingredients doesn’t automatically equate to healthfulness; most purists would say a great steak or hamburger only requires a touch of salt and pepper to be excellent, after all. However, I feel like this is a good way to keep track of exactly what I’m eating and make the most of my time, money, and materials!

For the sake of flexibility, I’m eliminating a handful of “pantry essentials” from my 5-ingredient criteria. Ingredients like salt, black pepper, and olive oil are so necessary and common to most recipes and households that it’s likely they’ll exist in almost every recipe I make. Having them take up 3-ingredients every time would be highly limiting, so I am dis-counting them among my 5 final.  The sticklers out there probably think that’s cheating, so I’m sorry to disappoint! Hopefully you’ll still find the recipes tasty, despite my rebellious usage of 2-3 extra ingredients. :)

So, to start off what I hope will become a series here at Yummly, I made this super easy, tasty Shrimp, Snow Pea, and Zucchini Stir Fry! All you need in addition to the title ingredients are a bit of fresh lemon and garlic! It comes together in under 25 minutes, and it makes a very satisfying dinner too. The flavors are fresh and simple, go together quite well, and it’s not too bad for you either! What more can you ask for in a meal?

Shrimp, Snow Pea, & Zucchini Stir Fry!

Ingredients

  • 10 large shrimp, shelled and deveined
  • 2 medium-sized zucchini, washed and chopped
  • 1 to 2 cups snow peas, washed
  • 1 - 2 cloves of garlic, minced
  • a squeeze of lemon
  • 1 tbsp olive oil
  • salt and pepper, to taste

Directions

  • Squeeze a bit of lemon over the shelled and deveined shrimp and leave it in the fridge until you're ready to use it.
  • Warm your pan over medium-high heat. Once your pan is hot, add a touch of olive oil and salt to it. Toss in your chopped zucchini and let it brown, stirring and flipping the zucchini with a wood spoon once it's gotten some color. Set your cooked zucchini into a bowl, then add your snow peas to the pan. Cook them until they've reached your desired texture (I like them on the raw side, but if you prefer them softer, go for it!) Set those into the bowl as well.
  • Turn off the stove and remove your pan from heat. Toss your raw shrimp into the pan, cover the pan with a lid, and let your shrimp cook for 7-12 minutes, or until the shrimp is fully opaque. (This is my favorite way to cook shrimp, but you can cook it your preferred way if you like).
