Describe your culinary style.
My culinary style is anything and everything homemade.  If I can make it, I would rather do so than buying an ingredient.  I haven’t opened a can of anything in years.  I recently made almond paste rather than buying it and was shocked at how easy and delicious it was.  Beyond that my culinary styles diverge when it comes to savory versus sweet food.  With savory food, I’m all about simple.  To me there’s no better dinner than a roasted unseasoned piece of wild salmon or halibut.  Salt is something I use very sparingly, preferring to let the flavors of the primary ingredients shine.  Sweets, where my passion in the kitchen lies, are a whole different story.  Nothing makes me happier than spending the whole day in the kitchen making a complicated layer cake and then enjoying the result of my hard work.  Different flavor combinations and unique treats are what keep me going.

For someone new to your blog, which recipe do you recommend they try first?
I love each and every recipe on my blog and have eaten more than my fair share of all of them. I like to have recipes that vary greatly in difficulty. I would definitely recommend the Cinnamon Biscoff Puppy Chow and Microwave Biscoff Fudge. They are easy to make, use one of my favorite ingredients – Biscoff! – and everyone loves them. My absolute favorite recipes are the Caramel Blondies and Peach Blackberry Layer Cake. They are much more complicated and labor intensive with multiple steps, but they are my original creations and turned out better than I ever could have imagined. I crave them all the time. I think of the Blondies in particular as quite unique and perhaps my signature dessert.

What is the main source of inspiration for your recipes?
My inspiration comes from all kinds of places.  From restaurant dishes to TV shows to the things I buy at the grocery store to my favorite flavor combinations, both new and old.  Inspiration strikes all the time.  The real key is taking that inspiration and translating it into a delicious dish, a task that is sometimes easier than others.  It is so rewarding when inspiration creates something amazing because I have watched the process evolve from just an idea to a wonderful end product that my family, friends, and I can enjoy.

If you could have one food while stranded on a desert island, what would it be? 
I’d say bananas because that’s the only food I eat everyday, but they’d probably grow on the island.  So, I think I’d pick peaches.  They won’t grow on a desert island and are one of my favorite foods.  I love eating them as is, as well as baking with them and even occasionally using them in savory applications.  I can’t imagine a world without peaches.

What is your ultimate guilty food pleasure? 
I don’t have guilt over eating dessert ever. After a day full of exercise, fruit, vegetables, and wild caught fish, a heaping helping of dessert is my reward. I rarely eat dinner out at restaurants, but when I do, I always order french fries. They are my ultimate guilty pleasure food that I eat no more than once a month. Even if a restaurant doesn’t have them on the menu, I ask them to make some because they are a rare treat to which I always look forward. It is on my bucket list to make my own one day.

Define Yummly.
Yummly is food that looks, smells, and absolutely tastes amazing.  It is about making things from scratch, using the best ingredients possible, and enjoying indulging in fabulous food.  But mostly, Yummly is the experience of making and eating food.  For me, spending time in the kitchen baking and cooking with my mom is the best part about food.  It’s our bonding time and our team work makes everything taste better.  The experience of eating with my parents and friends is also an important part of Yummly, as it is nearly impossible for foods to be Yummly when always made and eaten alone.

Describe your culinary style.
My cooking style is based on simple great ingredients and layering of flavors. I grew up in a typical Canadian meat and potato house, but when I develop recipes now, I apply techniques that I’ve learned from studying other cuisines predominately Italian and French. Technique is technique—patience and respecting the products that you are working with to ensure that flavors are perfectly balanced doesn’t necessarily have to do with a specific cuisine. I love reading cookbooks,cooking magazines and food blogs. I study cooking constantly! I never miss an opportunity to ‘talk shop” with the butcher, the fish monger, the green grocer and every cook who will have me in their kitchen.

For someone new to your blog, which recipe do you recommend they try first?
Bacon Marmalade: A great party food!
Buttermilk Pancakes: They’re delicious and easy!
Cheddar Cheese and Dill Biscuits: The best!
Panzanella: The best salad ever!

What is the main source of inspiration for your recipes?
The main source of inspiration for my recipes is the season. I love to use in season local raw ingredients.

If you could have one food while stranded on a desert island, what would it be? 
Pizza! I love it and if I’m going to be stranded I’ll be lonely so I may as well eat what I love…

What is your ultimate guilty food pleasure? 
Cheese –  Young, hard, creamy or stinky. I have not met a cheese that I didn’t love!

Define Yummly.
You know that thing that happens at the back of your mouth when food is so lovely that you start to produce too much saliva and you have to do a little gulp – that’s Yummly.

Chocolate Chip Scones

I love weekend baking. I rarely plan ahead what I’ll make; instead I let myself find spontaneous inspiration. Because of this, I have to be creative and use whatever I have on hand. These tasty scones fit the bill this time! I always have the necessary butter, flour, vanilla, chocolate chips etc., but these still felt special. They do call for buttermilk, but here’s an easy substitute.

Chocolate Chip Scones
Makes 8 scones

Ingredients:

2 cups all-purpose flour
1/3 cup plus 2 tbsps sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 tbsps chilled unsalted butter (diced)
3/4 cup mini semisweet chocolate chips (or regular ones, chopped finely)
3/4 cup chilled buttermilk
1 egg yolk
1 tsp vanilla extract
milk (for brushing on scones)

Directions:

  1. Preheat oven to 400°F. Butter and flour baking sheet. Sift flour, 1/3 cup sugar, baking powder, baking soda and salt into large bowl. Add diced butter and rub into flour mixture with fingertips until butter is reduced to size of rice grains. Mix in chocolate chips.
  2. Whisk buttermilk, egg yolk and vanilla in small bowl to blend. Add mixture to dry ingredients and combine until dough comes together in moist clumps.
  3. Gather dough into ball and press out on lightly floured surface to 8-inch round. Cut round into 8 wedges and transfer them to baking sheet.
  4. Brush scones lightly with milk and sprinkle tops with remaining 2 tablespoons sugar. Bake until scones are crusty on top, about 15-20 minutes. Serve warm.

Mini Caramel Apple Pies

The one thing better than a warm slice of homemade apple pie is having a whole pie all to yourself. Even better than that is a perfectly portioned mini caramel apple pie! These adorable lattice top mini pies are sure to summon “ooohs” and “aaahs” from everyone you share them with. Just pop these muffin tin pies into the oven and fill your home with the smell of caramel, apples, and buttery baked crust.

Caramel Apple Mini Pies
Makes 8

Ingredients:

3 cups apples (peeled and diced, Jonathan or Granny Smith)
1/4 cup packed light brown sugar
1/4 cup sugar
2 tbsp all-purpose flour
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
1/2 tbsp lemon juice
1/2 tsp vanilla
2 tbsp heavy cream
2 tbsp butter
1 egg white
1 package refrigerated pie crusts (or your favorite recipe)

Directions:

  1. Peel and dice apples.
  2. Sprinkle with lemon juice.
  3. Combine dry ingredients in large bowl and add apples. Toss to mix. Add vanilla and cream.
  4. Melt butter in heavy skillet. Add apple mixture and cook approximately 6 minutes to soften apples.
  5. Remove crusts from fridge. Flatten out one of the doughs on a cutting board.
  6. Gently cut 4 inch circles of dough using a cup, bowl, or cookie cutter with a 4-inch diameter.
  7. Press dough into the muffin tin cups, making a thin even layer on the bottom and around the sides.
  8. Spoon apple mixture into each cup right up to the rim , but no higher.
  9. Roll out the remaining dough and cut out small strips (6 per pie) slightly longer than the width of the top of the pies. Lay strips across the tops in a lattice pattern and attach to edges of pies using the end of butter knife.
  10. Lightly brush egg white over tops of lattice.
  11. Bake pies at 375 degrees F for 30-35 minutes or until crust is golden brown and apple mixture is bubbling.

Make sure to serve these beauties with vanilla ice cream! For added indulgence, try topping them off with a drizzle of salted caramel sauce.
