Banana Bars
1/2 cup butter (or margarine, softened)
1 1/2 cups sugar
2 large eggs
1 cup light sour cream
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
2 mashed bananas (ripe, 1 cup)

Cream Cheese Frosting
8 ozs light cream cheese
1/2 cup butter (or margarine, softened) 2 tsps vanilla extract 4 cups confectioners sugar |
Directions:
- Preheat your oven to 350 degrees Fahrenheit.
- Combine flour, baking soda, and salt together in a bowl and set aside.
- In a mixing bowl, cream butter and sugar together. Once it’s light and fluffy, add the eggs, sour cream, and vanilla.
- Gradually mix your dry ingredients into your wet mixture.
- Mix in your mashed bananas.
- Spread your mixture into a greased 10×15 inch pan and pop it into the oven for 20-25 minutes.
- Meanwhile, for the frosting, beat together your cream cheese, butter, and vanilla. Add confectioner’s sugar in portions and mix until you’ve achieved your desired consistency.
- Once your banana bars are cooled, frost your bars and enjoy!
